A Secret Recipe Revealed!

The hosts at Gauksmýri farm, Jóhann and Sigríður, were kind enough to give us the recipe for their special rhubarb pie, a favourite recipe since the foundation of Gauksmýri in 2002!
Rhubarb pie a'la Gauksmýri
Fill the bottom of a pie dish with small pieces of rhubarb. Drizzle a little oil over the rhubarb pieces.
3.5 dl sugar (1.5 cups)
2 dl flour (0.85 cups)
Whisk together the sugar and eggs until light and fluffy. Blend the flour carefully into the sugar and egg mix. Spread the dough over the rhubarb.
1 dl brown sugar (0.4 cups)
75 g butter
1 dl flour (0.4 cups)
Serve with whipped cream.
